Inspiration and a little bit of chocolate.

This is the most recent video made by the church–these are always so inspiring and well done. Shout out to Tucker (Julie’s man) who works on these amazing Mormon Messages. And this one is even more fun for us because my brother Tyler and his brand new wifey Lisa are the bride and groom at the beginning! :)

And this particular message comes at the perfect time–I think a lot of us women need a pick-me-up lately. (Thanks for the dinner/therapy session last night, Julie, Mary and Kecia–it’s so nice to empathize with each other about and ups and downs of motherhood! And thanks to Jaden for being understanding of my need to get some “girl time” whenever I need it!!) Anyway, hopefully this will also inspire you. I love and miss President Hinckley.

Okay, so please forgive the randomness but I also wanted to share a delicious recipe. I’ve made a few batches of it this week using zucchini from our own little garden. My kids are going crazy over it and beg for me to make more on a daily basis. :) It is moist and chocolately and yum.


Chocolate Zucchini Bread

3 cups all-purpose flour (I used 1 c. wheat flour)
1/4 cup unsweetened cocoa powder
1 tablespoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
2 cups white sugar
3 eggs
1 cup vegetable oil (I used 1/2 oil and 1/2 applesauce)
2 teaspoons vanilla extract
2 cups shredded zucchini
1 cup chocolate chips (or more)

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9×5 inch loaf pans.

In large bowl, combine flour, cocoa, cinnamon, baking soda, baking powder and salt, mix well. In separate bowl, combine sugar and eggs, beat until well blended. Add oil and vanilla; beat until combined. Stir in zucchini. Add flour mixture; stir just until moistened. Stir in nuts and chocolate chips. Spoon evenly into loaf pans.

Bake in preheated oven for 55 to 60 minutes, or until toothpick inserted in center comes out clean. Cool in pans for 10 minutes. Remove bread from pans; cool completely on wire rack.

Ahhhh, so much to post, and so little time. :) I’m majorly behind. I still have a plethora of summer activities, holidays, a post of the wedding day photos and fun on the list of bloggity goodness, plus gearing up for back-to-school and my baby brother coming home from his mission in a few short weeks…yikes. We’re heading to the cabin for some much needed family time this weekend, so hopefully we will get a little bit of rest and rejuvenation! And lots of good memories and photos to remember them by!

Brooke I have been feeling a little overwhelmed and basically a failure lately. Two kids changes things and makes days hard. I was praying to find something to remind myself why I am a mother and stay home to tend to the kids. Your post was that answer. Thank you. I needed it.

I'm dying to try that bread. I must make a visit to the farmers market and get me some zucchini. Thanks for sharing it. Last night was so necessary. We need to do it more often. Love ya. Have fun at the cabin…wish we could come with.

Man. That video is GOOD! Unbelievably well done!
I'm glad you ladies found something good in it. I know that there sometimes tends to be a focus on the Priesthood, etc. in the Church and Pres. Hinckley is a good man to speak of how important women are in the entire plan. I appreciate all of you!!!!

YUMMM. Sounds better then the zuchine and leek soup i made with all my garden foods :) I will have to give this one a try. (the soup was good, just would not compare with chocolate)

Brooke, I knew that was your brother! I was just preparing my YW lesson and watched that video. I was so surprised to see your brother. So cool! Miss you! Hope you are doing good!
